Depression cake

(Based off of this recipe.)

Cake ingredients

  • 1 cup nut milk
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 cup Earth Balance
  • 1/4 cup cocoa powder
  • 1 tsp garam masala
  • 1 cup sugar
  • 1 tsp salt
  • 1/2 cup brown rice flour
  • 1/2 cup sweet rice flour
  • 1/2 cup buckwheat flour
  • 1 1/2 tsp xanthan gum

For the garam masala I used ground black pepper, cinnamon powder, and cumin powder as I lacked garam masala.

Frosting ingredients

  • 3 cups confectioner’s sugar
  • 2-3 tbsp orange juice
  • 1 tbsp vanilla
  • 1/4 cup Earth Balance
  • 1 tbsp coconut oil, liquid

Directions

  1. Preheat oven to 350 F.
  2. Melt Earth Balance with cocoa powder and garam masala and stir until smooth. Set aside.
  3. Mix flours, xanthan gum, and baking powder. Add in milk mixed with vanilla. Once mixed, mix in the chocolate mix.
  4. Bake for 30 minutes.
  5. Cream confectioner’s sugar with Earth Balance and coconut oil. Add orange juice and vanilla. If it’s too solid, add tiny bits of orange juice until you get the right texture.
  6. Wait for cake to cool before frosting it.
  7. Top with coconut flakes.

This seemed to make a pretty thick frosting; unless you love sugar, go for 2/3 or 1/2 the amount. The center of mine was slightly undercooked, but that’s okay.

      Your blog’s alright. Not quite my type of blog–I mainly prefer just recipes, or excessive food photography–but it’s interesting enough to follow. I look forward to seeing more of your recipes.
